A real quick meal if you have a George Foreman Grill is a chicken quesadilla.
4 oz. cooked chicken breast
1 oz. cooked sliced onions
1 oz. cooked sliced peppers
2 oz. blended grated cheese(Monterrey jack,cheddar,Swiss)or just plain cheddar
1 preferably whole wheat tortilla
sprinkle of taco seasoning or chili powder and cumin if you don't have taco seasoning
Pam or olive oil spray
Sprinkle your seasoning on your chicken breast and grill it till its completely done.
our can also cook your onions and peppers also on the George Foreman just slicing them and spraying them with oil spray cooking them after the chicken.Slice your chicken in strips then add your peppers and onions and cheese place in the middle of your tortilla and fold it in 1/2.once you have done this then place the quesadilla on the grill and brown.
Optional serve it with a low fat sour cream and Tomato salsa.
Tips:If you like guacamole use the brand Wholly Guacamole find it tin the supermarket.
Also you can use Purdue cooked chicken if you want.It saves a step if you don't like cooking raw chicken

Knives
Someone asked me what knives I like.The best way to see what works for you is lay out 3-4 different brands Henckels,Forishner,Cuisinart,etc. and with your eyes closed see what fits your hand the best.Because they may be expensive doesn't mean they are good for you.Whatever feels good is the one.I still have some knives from The Culinary Institute of America when I went to school and they are well seasoned.
For Father's day grilling
Here is a great dry rub for grilling for Father's Day.It goes great with all meat and even fish !
2 tbl. salt
2 tbl. coarse black pepper
1/2 tsp. cayenne pepper
1/2 tsp. coriander
1/2 tsp. cumin
1 tbl. white pepper
1/2 tsp. garlic powder
1 tbl. Paul Prudhomme's blackened seasoning
1 tbl. chili powder
Mix everything together and sprinkle over the meat..This Dry rub will keep for weeks.
